Chablis
Our Chablis comes from a parcel which is partially on a plateau, with a marne-based soil facing South-East, giving it freshness and the typical minerality of Chablis.
Tasting notes:
Its colour is pale gold lifted by brilliant highlights. It is defined by its balance between freshness and minerality, with an array of aromas including white fruits, citrus notes and flowers. It will pair well with oysters and sea food, as well as snails, andouillettes, poultry and goat’s cheese.
It can be drunk young, but will be at its best after 5 to 6 years.
On its own serve at 10°C, at the table at 12°C.

The 2020 Chablis Village has a satisfying strictness on the nose, focused and quite flinty, perhaps nudging Premier Cru complexity. With good balance and acidity, the palate is slightly saline, fresh and has a texturally-satisfying finish that leaves you wanting more. This is worth seeking out.
