We have two parcels of Chablis 1er Cru Vaillons situated in two different vineyards - Roncières and Épinottes. They face South-East with a soil of colluvial deposits of limestone clay, very stony on a Kimmeridgian bedrock.

Tasting notes:

The Chablis 1er Cru Vaillons is pale in colour, lifted by sparkling highlights. It is defined by its powerful and elegant nose of ripe yellow fruits. Its mouth is rich and plump, but also retains its vivacity.
This is a seductive wine that opens up faster than other Chablis 1er cru. It is approachable when young, but also has good ageing potential.
It pairs perfectly with game terrines, burgundy snails, Chablis andouillette, poultry, fish, shellfish and crustaceans – uncooked or in sauce, boiled eggs or Chablis ham.

It can be drunk after 3 years, or up to 10 for certain vintages.

Serve between 12°C and 14°C whether just enjoying it alone or at the table.

Chablis 1er Cru Vaillons 2022 vintage

Despite the glass, here is plenty of aromatic width – energetic, with lots of yellow citrus. That’s another wine of proper Chablis freshness and in this case more airy citrus – all yellow. Deep and more stony finishing, clearly longer – just an excellent wine and properly Chablis.

Also an open nose but today it lacks a little differentiation between the wines. More intense, more mineral in style. Broad and again very tasty in this finishing width. Another very tasty wine.

Chablis 1er Cru Vaillons 2022 vintage : 89/100

A Vaillons with plenty of appeal. Fleshy stone fruit on the palate, zesty lime and lemon acidity to balance. A little abrupt on the finish, but already drinking well.

The 2020 Chablis Vaillons 1er Cru has a very aromatic bouquet with yellow flowers, peach skin and light flinty scents on the nose that you could easily lose yourself in. The palate is well balanced with a weighty entry, fine acidity, lightly spiced with marine-influenced finish that lingers in the mouth. Very fine.

Chablis 1er Cru Vaillons 2015 vintage : rated 90/100

The nose is fresh and offers a fine incisive side. It reveals notes of lemon, crushed apple and small notes of fresh nutmeg associated with touches of spices, fresh mirabelle plum as well as discreet hints of citrus fruits, racy minerality and spices / toasted. The palate is fruity and offers acidity, juiciness, an incisive side, tension as well as minerality. On the palate this wine expresses notes of lemon, crunchy apple and small notes of crunchy nectarine associated with touches of zest / citrus, dried almond, hints of toasted oak as well as an imperceptible hint of spices (in the background) and pink lychee.
